Stellar at 1-Altitude is proud to be the first restaurant in Singapore to rear its own wagyu cattle at Australia’s premium Wagyu farm located in the Riverina region of New South Wales. Steadfast in its ongoing promise of sourcing and serving only the best ingredients from around the world, Stellar at 1-Altitude is now exclusively serving Tajima Wagyu beef sourced from its own cattle. “Working directly with Tajima wagyu farms give us a special insight into what it takes to produce such a premium ingredient, which in turn inspires our culinary approach, ultimately resulting in an elevated gastronomic experience for our diners.” – Executive Chef Christopher Millar.

Reputed for its remarkable quality, the Tajima crossbred Wagyu recently claimed top honours in the 2017 Wagyu Branded Beef Competition, scoring Gold in the class of Crossbred Wagyu, Bronze for Commercial Wagyu Steak, and was awarded Grand Champion Wagyu Brand by the Australian Wagyu Association.

Start your journey at Stellar at 1-Altitude with a Tajima butchery masterclass presented by special guest Kylie Schuller from Tajima New South Wales, Australia; followed by a friendly Wagyu cook-off between Stellar executive chef, Chris Millar, The Summerhouse’s chef de cuisine Florian Ridder, and Peruvian-born, Melbourne-based chef Alejandro Saravia of Pastuso—set to span the diverse culinary gamut through a six-course tasting menu.

Held on Wednesday, 6 September 2017, each chef will put forth his own interpretation of specialty Tajima Wagyu cuts such as a juniper-cured Tajima beef tartar by Chef Florian; a hearty broth of Tajima “Le Pot-Au-Feu Grande Fete” replete with poached stuff flank, pickled tongue, bone marrow, and crumbed oxtail by Chef Millar; and a Tajima’s Paddock featuring 30-day dry-aged Tajima Wagyu chuck tender, fermeted barley, and water chestnut jus by Chef Alejandro.
